Directions. Heat the oven to 210C fan bake. Heat a large frying pan or char grill until hot. Rub the beef with 1 tablespoon oil and grind over plenty of black pepper. Place in oven and roast beef for 18-20 minutes for medium-rare beef. Slice beef and place on a large platter.

Rub the beef with the olive oil and season with salt and freshly ground black pepper. Let the beef rest at room temperature for 1 hour. Heat a large, heavy frying pan over medium-high heat. Quickly sear the meat about 5 seconds on each side then remove from frying pan.
